Homemade Almond Milk
Another super simple staple that's so much better than the store bought version without all the added crap (what is Gellan Gum anyway??)
This version has no sweetener and I've added my homemade vanilla for an added flavor kick.
Ingredients:
- 1 cup raw organic almonds
- 2 cups of water, plus more for soaking
- 1 tbsp vanilla
- 1 tsp salt
Instructions:
- Soak the nuts in a large mason jar / bowl for 1-2 days
- Drain and rinse the almonds under cool water
- Combine almonds, water, salt and vanilla in a high-speed blender (like my Vitamix!)
- Blend at high-speed for two minutes .The water should be white and opaque
- Place the nut bag in a large bowl and pour the contents of the blender into the nut bag
- Squeeze as much of the liquid out of the nut bag. This should yield about 2 cups
- Refrigerate almond meal in a sealed container for a few days
- You can even use the leftover 'pulp' in the nut bag for almond meal (will post at a later date!)
