World Famous Chocolate Chip Sea Salt Cookies
I've searched high and low for the BEST chocolate chip cookie recipe, and after hundreds of attempts have come up with a version that will satisfy any adult sweet tooth -- with the perfect combination of dark chocolate, in a dense fluffy shape and topped with sea salt -- this is sure to be a crowd-pleaser! If you want to go the extra mile, you can use my homemade chocolate recipe (I do this!) to make your own chocolate chips by cutting the bar into chunky pieces.
If you have any leftovers, throw them in a bag and store in the freezer. Microwave for 20-30 seconds per cookie, and you've got yourself an easy week day dessert. Sure beats those store bought cookies loaded with ingredients you can't pronounce.
And one piece of advice on the below recipe, you CANNOT substitute the almond flour for other gluten free flours. I had a friend attempt to make these with a gluten free flour mix and it did NOT work.
Prep time: 10 minutes
Cook time: 10 minutes
Yields 12 cookies
Ingredients:
- 4 cups of blanched almond flour
- 1 tsp fine sea salt
- 1 tsp of baking soda
- 2 tsp of pure vanilla extract
- 2 large pasture-raised eggs
- 1/2 cup of pure maple syrup
- 1/2 cup plus 2 tbsp of coconut oil melted
- 1 bar of 90% or greater dark chocolate (I like this one!) OR my homemade chocolate recipe cut into chunks
- Maldon's Sea Salt to sprinkle on top
Instructions:
- Pre-heat oven to 350 degrees
- Mix the almond flour, baking soda and fine sea salt in a large/medium mixing bowl
- Mix the eggs, maple syrup and vanilla in a small mixing bowl using a hand-mixer or by hand
- Melt the coconut oil
- Pour the wet bowl into the dry bowl of ingredients and mix until combined
- While the hand-mixer is turned on, slowly add the melted coconut oil
- Using a spatula, gently add the chocolate chunks into the batter
- On a large baking sheet, lay out a sheet of parchment paper
- Using generous spoonfuls of the batter onto the baking sheet to form 12 cookies (yes the batter will be sticky!)
- Sprinkle as much of the Maldon Sea Salt flakes onto the tops of the cookies as you prefer (I'm a huge salt person -- so I add a lot but you can season to taste!)
- Bake cookies for 10 minutes (for soft consistency) to 12 minutes (for more firm cookies)
- Enjoy!
