Erewhon Copycat Salmon Belly Cakes (Keto)

I was recently in LA and had the pleasure of ordering Instacart from Erewhon a few too many times. One of my favorite prepared foods there was the Salmon Belly cakes. They were a perfect easy lunch. Once I got back to NYC, my mission was to recreate them at home.

We made 3x the recipe and saved the remainder in cupcake molds in the freezer! Will be a perfect / quick / easy protein option in the future.

Erewhon Copycat Salmon Belly Cakes (Keto)

I cracked the code on my favorite Erewhon Salmon Belly Cakes. They are perfect on a salad, frozen for later or anytime!

Ingredients

• 1 pound of salmon belly minced
• 4-8 garlic gloves minced
• 1-2 tbsp of minced fresh ginger
• 1 bunch of scallions minced
• 1-3 tsp of chili paste
• 2 tsp sesame oil
• 1 tbsp rice vinegar
• Salt & pepper to taste
• 1 tbsp sesame seeds

Instructions

1. Combine all ingredients together in a bowl
2. Mold salmon patty mix into a small patty
3. Cook patty over medium high heat for 2 min on each side
4. Freeze whatever you won’t eat into muffin trays and then put in a freezer bag
5. Enjoy!
