Paleo Stuffed Zucchini Flowers!
Yes it’s my FAVORITE time of year when zucchini flowers are in season. Zucchini flowers… What can you do with those crazy flowers?!? This was a childhood favorite at the single best Italian restaurant in NYC called Il Postino. If you haven’t checked it out, I recommend you do ASAP. It’s worth the splurge.
Back to the zucchini flowers. It was always a goal is mine to figure out a paleo version of this beautiful dish that utilizes an often overlooked part of the zucchini - the blossom! I think I finally did it. Be patient, this isn’t the easiest recipe, but once you get the hang of it you’ll be making this once a week during zucchini flower season (at least I do!). Check your local farmers markets for zucchini blossoms or try growing your own zucchini in the garden!
