Spaghetti with Tomatoes, Mozzarella and Basil
I spent two weeks in Italy last year and one of the biggest lessons I learned about Italian cooking is that simplicity is key. That means that with just a few ingredients you have to make sure you are buying the best and freshest ingredients you can. If you can track down real buffalo mozzarella - do it! Go for the organic tomatoes and be generous with the basil and red pepper flakes.
Don’t be fooled into thinking that this pasta is boring, it’s just the opposite. I had this dish for a birthday a few years back and thought I’d be disappointed. Instead it’s one of those dishes I crave regularly. Even the picky eaters in my house agree!
