Gigi's Keto-tastic Lasagna
This lasagna is super tasty, low(er) carb since there are no traditional noodles and full of healthy fats - but it’s loaded with dairy so for those of you avoiding dairy, you’ll want to skip this one unless you want to experiment with nut cheeses :) For what it’s worth, you can certainly substitute with goat/sheep cheese if that’s helpful.
The great part about this recipe is that it serves a very large household (like mine!). If you only have a few people eating this, then you’ll have leftovers for days. It only gets better the next day. You could also prep two smaller portions of this and save one in the freezer for later. It’s also a great dish to make ahead if you have guests coming.
This recipe was inspired by this blog here, but I make an important tweak which was substituting some of the ground beef for crumbled sausage which really makes this dish special!
