Paleo & Keto Italian Wedding Soup

A shoutout to my amazing big sister Venita for introducing me to the PERFECT cold weather soup. There’s also some history to a version of this recipe from the Italian side of my family. Venita used to make this alongside my Grammy and they’d get to test the meatballs together sandwiched between a slice of bread as the aroma filled the kitchen.

I adapted this recipe by doubling it and adjusting some of the measurements ever so slightly. Venita also recommends just using crumbled sausage to save you some time (instead of molding and frying the meatballs). Either way will be delicious. Once again, I recommend making extra for later. This recipe also freezes well!
